Inspired by my mother′s favorite dessert, I created this granola to hold her over between birthdays. Real carrots are baked right into the granola to truly give it a freshly baked carrot cake taste. But no carrot cake would be complete without its cream cheese frosting, so I added white chocolate and raisins that give it a surprisingly delicious finish. You will never need to make another carrot cake again!
